Pumpkin carving is a classic fall pastime -- and while you're carving those Jack-o-Lanterns, why not make a tasty and nutritious snack in the process? Once you clean out the inside of the pumpkin, put the pulp and seeds in a bowl and add a little water. Clean the seeds from the pulp, put them in a pasta drainer to rinse, and shake gently until the seeds are damp. Spread the seeds out on an oiled cookie sheet and bake for 30 minutes at 300 degrees F. Remove the seeds from the oven and toss them in 1 teaspoon olive oil, then in your choice of seasonings (Our favorites include cinnamon and sugar; Parmesan cheese and garlic salt; and salt and pepper). Spread the seeds back on the cookie sheet and bake for another 25 minutes at 300 degrees. Let the seeds cool for 15 minutes, then enjoy!
