If you are southern, then you probably already know that the best cornbread is cooked in a cast iron skillet. It's true! Just melt a little butter in the heavy pan until it is bubbly but not browning, then pour in your cornbread batter and pop the whole thing in a hot oven, that's about 425F. It comes out tender inside with a delicious crispy bottom.
