There are dozens of ways to see Paris from above, but in my opinion two sights far outshine the others. Climb the Eiffel Tower at night when you can see the city lit up. It costs a bit, though minors get a reduced rate, and its definitely worth the money. Climbing to the top of Notre Dame during the day is considerably less expensive but just as beautiful. With stone gargoyles at your side, Paris is laid out before you, the Eiffle Tower standing proud and the Sacre Coeur propped in the distance.
